I have another delicious salad for you guys! This salad has a slightly sweet flavor and the heartiness comes from the grain and nuts!
First caramelize those onions, low and slow. Cook on low heat in the butter for about 25-30 minutes.
Then toast some pine nuts (if you like them and want to include them)
At this point you will want to cook your quinoa. It’s way faster than rice and super yummy with awesome texture! I don’t have a picture though, so just try and visualize it in your head 🙂
Next, half some red seedless grapes and toss them in a bowl with the pine nuts and walnuts.
When the onions and quinoa are done, combine them into one pot and allow them to cool. I put them in the freezer for 5 minutes or so to speed up the process. After that, whisk equal parts honey and water for the dressing. Combine the now cooled quinoa mixture with the grapes/nuts mixture. Pour on the dressing and toss to coat. Next add some greens and some crumbled blue cheese.
Gotta love that baby kale! Now just toss again to mix everything evenly and you are done! Enjoy!
1 Tbsp butter
1/4-1/2 a yellow onion, thinly sliced
about a cup of red seedless grapes, cut in half
1/2 cup uncooked quinoa
1/2 cup chopped walnuts
1/4 cup toasted pine nuts
1/4 cup honey
1/4 cup water
crumbled blue or gorgonzola cheese
1. Melt butter over low heat. Add onions and cook for about half an hour. Stir occasionally. They should become brownish and taste sweet.
2.While they are cooking, cook your quinoa. Usually a 2-1 water grain ration. Bring water to boil. Add Quinoa and cover pot. Then turn to low and simmer. DO NOT REMOVE LID. Cook for 15-20 mins and allow to sit for 5 additional minutes off the heat.
3. Stir onions into the quinoa. Let cool. (You can speed it up by putting it in the fridge or freezer for a bit).
4. Combine pine nuts, walnuts, and grapes in a large bowl. Add cooled quinoa/onion mixture. Whisk together the honey and water to form a vinaigrette. Pour over the mixture. Add your greens and cheese and stir again.
